Albondigas Recipe

This yummy soup is perfect for the cold weather and it is a favorite in our house.

I hope you enjoy this soup!


1 lb of ground beef

1 small onion, diced

1/2 cup of chopped cilantro

1 8 oz can of tomato sauce

1 diced carrot

1 carton of chicken stock (if it is not too soupy, I had more chicken stock towards the end)

2 tsp of minced garlic

1 egg

3/4 cup of rice

1 tbsp of cumin

1 diced calabaza or squash


Mix all ground beef, rice, egg, garlic, cilantro, and onion in a large bowl.

Form small meatballs and place in a large pot. Add chicken stock, cumin, tomato sauce, carrots, and calabaza to the pot. 


If needed add more stock or water to fully cover the meatballs. 

Cook albondigas on medium for about 20 minutes, until rice is fully cooked. 

Serve with tortillas and enjoy!
