These meatloaf muffins are super yummy and they are 2 weight watchers points per muffin!
These are so yummy and easy to make. I found this recipe from Amanda Cypert on Youtube and have made them several times.
I like to serve the muffins with air fried sweet potatoes and mixed vegetables.
1 lb lean ground beef
1/2 onion diced
1 tsp of minced garlic
1 whole red bell pepper, diced
2 tbsp of almond flour
1/2 of a meatloaf seasoning packet
4 slices of center cut bacon, cooked
1/4 cup of unsweetened ketchup
Mix all ingredients in a big bowl. Spray muffin tin with cooking spray. Form meatballs and place inside of the muffin tins. Add ketchup on top of muffins. Bake muffins at 375 for 30 minutes.
I love to meal prep these muffins with veggies for the week and it is a favorite in our house. I hope you enjoy them.
